If you don't remember your email and password, then that's it. You can't link your Steam account in multiple Social Club accounts.

For Steam Accounts
Please submit a support request to disconnect your Steam account from your Social Club account with the following information.
The nickname for the Social Club account you want unlinked
The Steam ID64 for the Steam account you want unlinked:
Sign in to Steam
Under View > Settings > Interface select 'Display Steam URL address bar when available'
Select OK
Under your Profile Name select Profile
Select Edit Profile in the top-right
Clear any Custom URL settings from your profile
Select Save Changes
Under your Profile Name and Select Profile again
Copy the URL displayed at the top of the screen
(e.g. https://steamcommunity.com/profiles/76561197960287930 )
The long number at the end of this URL is your SteamID

But how can I contact directly to steam tech support (i only see steam tech support which is basically a FAQ and can't contact with a human being)

Again, the linking is done on their end. Not Steam.
Follow the guide you posted, collect the information and provide that to Rockstar Support.
Steam support can't do anything for 3rd-party DRM that requires accounts.
Ive been waiting for unlinking since May 2022 and im sure that soon my case will be solved by this great company. For real this is absurd - they are asking for some f*** ridiculous informations only becouse they dont want you to play the game u have bought.
Every single game company asks for an extreme amount of proof of ownership to make sure you are the correct owner of the account.
Epic Games, Ubisoft, EA, Battle.net and even Valve does this to ensure the original owner is actually the one requesting access to the account.
Their politics in this case is absurd, i wont buy any other product of Rockstar again.
GTA was also free one epic games, so helping me out here wont really matter for them, they just prefer to lose 1 customer instead.
I'm pretty sure that's what they mean by losing "entitlements".
I'm going through the same thing and it is pretty egregious considering a hacker effectively stole my property through their ♥♥♥♥♥♥ Social-club launcher. If I gave a ♥♥♥♥ enough and could afford it I'd sue them.
Your Steam account wasn't hacked, it was hijacked.
