Sound like your account was possibly hijacked. That's why you saw what you did and needed support's assistance to recover it.
Well i thought about it being something like that but how would they be able to make it so i cant view the profile and why would they leave the same password, mail, phone number and the steam guard
A) Log-in to phishing scam site, they can make it look like Steam tricking you that way. This is common scam from sites that claim to be "legit" which majority/all of gambling trading sites are not legit at all as they provide fake login pages to fool people.
B) They can con you giving them login information by doing scare tactic like you been ban, you having pending ban, or trade your items now before ban, basically trying to scare you, to get you to talk to a scammer claiming to be admin/support. They ask for info, they get you to login to their scam site, or they ask you to download things from them to run on your device, these are the scam methods.
For account getting deleted, in order to issue it proof of ownership is needed, you would've gotten an email about it, or email about account details changes, if get email about account changes such as passwords, or email change you didn't make, then means someone on your account. If you got email stating your account for deletion then means support was contacted, and was provided proof of ownership to start the deletion process.
Now if you got alert stating your name been change for violation, then that means someone reported you, and support revert your name to your Steam ID number, this happens if you made an offensive, or against the rules names, this include trying to be creative trying to avoid getting flag while using offensive, or something against the rules names.
The process takes 30 days and you can cancel at any during the 30 day period.
If you did not do this then assume your account is compromised and contact Support.

so they may safe some account details forever...for statistics, isnt it?
Also somethings may be saved such as your transactions history for tax reasons.

Nope. Was never deleted because if it was and Steam warns about this the account is PERMANENTLY deleted. There is no recover deleted account because it is deleted. Thus you can't be using an account that got deleted.
Not like deleting files on a computer and having the option of recovering them by using recycle bin to restore them. Or delete and then using data recovery software. When you delete stuff you are deleting the reference as to what file/s and where the file/s are stored but the file/s still remain where they were. Data recovery can locate data, provided that data has not been overwritten with other data.
