I'd say the best thing to do is start with the classics - SFV, Mortal Kombat/Injustice, Tekken 7, Capcom vs Marvel (just not Infinite) - and see which looks interesting and appeals to you theme wise and go from there. If your going to be learning the controls you want to spend time with something you like the look of. Also, if one of the classics doesn't "gel/click" for you try another; the controls and timing on each are pretty different.
Personally, I'd say start with SFV and MK. Tekken is just amazing but can be frustrating at times to get the hang of.
Edit: Oh and basic mechanics can vary between games of the same franchise quite a bit (looking at you MK), so that's best figured out by watching some Youtube vids.
Edit 2: Oh and just adding this thread from earlier this week for you to look at, there are some great recommendations as well (obviously just ignore the games that aren't actually in the genre).
