Go into your userdata / numbers <- that's you / 760 / remote folder. That will have your screenshots for the games you play. If you take a lot of screenshots, they'll be in among those numbered folders (those are the GAME ID numbers). You can safely MOVE those, copy them to another location like a zip or external drive and delete them from the 760/remote/# folder, but don't expect Steam to find them later, they're on their own now.
But no, you can't remove the userdata folder and expect anything to work. It's literally... the data that Steam games require to recognize that you are the owner of the game, and many other things stored in those folders.
HOW MANY SCREENSHOTS DO YOU TAKE, man?
Properly enough that it would be better to record video instead.
Are there perhaps multiple USERS on that computer? because ... I mean, I take screenshots literally every time I play, every game I play, and mine's still under 3gb. And I have actually-scores of games on my account, but only one account.
Do you take videos in-game? I mean, 11g is a LOT for so few games that you don't take screenies in.
