Can I (or how) uninstall old proton versions?
Proton versions take relatively a lot amount of space on a disck but I don't need or use old versions.
For example 3.7 and 3.16 are too old and usless. I would like to remove them and free a few GB of space which is very precious on SSD.

Also, read the man page of whatever package manager you're using.

Despite old '90s Home Improvement jokes, there's never any shame in reading the manual. Quite the opposite, telling the PEBCAKs to "RTFM" is never inappropriate

In this case it wasn't a matter of a package manager, because Proton was within Steam itself. I had old, Proton 3 versions that for sure were of no use, and yet they took precious space and that is why I needed to get rid of old versions.
