You may still see some games with that tag here and there, depending on their other tags but a lot less.
That and if they have a lot of other tags of genre that you like, they may still be displayed.
So for example, if you play a lot of games with the "Action" and "Fighting Game" tags, you will still see those on the store, even if they have "Anime" in there.
Steam tries to show you games depending on the stuff you play, that is how the algorithm works.
But you will see far less of everything else with that tag.
