You can't edit them once they're uploaded to your profile.
You can edit the screenshots using any image editor, by editing the image file in your steam/game/screenshot folder. FYI, you will need to edit both the thumbnail and the screenshot or else they will look different in your screenshot album on Steam.
What makes even more sense, is to pause your game, adjust/disable the hud settings and then take the screenshot.
You should be able to disable the hud or at least some elements of it in-game with edit mode/ctrl+H.

Right, your original question which I answered but now you're getting into game specifics. Anyway, hopefully the links I gave you will help you out. That hud mod I linked to sounds like it has the features you want.
