Tracking gameplay hours, achievements, in-game Steam dashboard not working.

I played Slime Rancher for the entire day on Monday and for several hours on Wednesday. However, according to steam I've only played 2 hours in the last 2 weeks and that's just not true. During these hours of game play I earned 2 or 3 different achievements (one for beating the game) and none of appear as earned on my game page even though I got the achievement notification in-game. Lastly, while playing I tried to open the steam dashboard multiple times and it stopped working completely.
