Ark is pretty much the only 3d open world sandbox that seems to be going anywhere. 7 Days to Die would be ok, but it's huge and only offically supports 8 players per server.
Ark runs their servers at 70 players per server, but when the servers are full, they throttle down the NPC dino population to try to curb lag. It sucks having to set your alarm clock for 3am when no one is on your server to try to find, and tame the dino that you want. Other than that, it's much fun.
For a sandbox game I'd get Tropico 4 when it's next on sale (as it is on GOG now). Probably the most playable city builder game out there.
Rollercoaster Tycoon 2 and 3 have aged but they still provide some good play experiences.
VERY off the wall is Startopia - a space station management game. The main campaign is very short but it's a lot of fun.
And I've heard the name Minecraft. Don't know much about it but it may be worth checking out.
