you have to redownload all the games that are available for mac.
all the other games that dont have mac versions... sorry, you cant play them.
edit: i see you have civ games so i edited my post.
you can have steam (1 account) on as many platforms/devices you want.
just remember that steam guard will ask you to verify your mac when you try to log in.

Just download and install steam on your Mac, login to your Steam account and go to the "Library" tab. You will see all Mac games that you own and can install them there.
Since Mac and PC are different platforms, you cannot just copy all the games. Mac games use different files than PC games. You have to download them via Steam.
For all games that support Steam Cloud Sync and simply activate it on the windows computer, save your game to the steam cloud (varies by game) and simply load them in the Mac version.
This allows you to transfer game saves.
For Mods and addons: depends on the game. Some games need you to download them for Mac, others keep them in the Steam cloud.
This is for Platform change. If you stay on the same platform (eg. migrating from Win7 to Win10) you can just copy your steamapps folder(s) and register them as additional library in steam client. THAT DOES NOT WORK CROSS-PLATFORM!
