Every location i listed i have saved game files in. So maybe the games you have are saved in a different location then i listed. Also sometimes the folder is named by the app number in userdata and by the maker of the game in other locations. The folder won't always have the game name it will be the dev name or the publishers name as the folder name.
This site will show you where the save game data is located at just search for the game and it will tell you where the config file is and saved game files are at.

Always on the OS drive.
1) Redirect My Documents to a separate folder on another drive. That will cover saves in "My Documents" or "My Documents/My Games"
2) Redirect the %APPDATA% folder to another drive. That covers games that save in %APPDATA%
you can do all those redirections by going into those foldres properties and donig teh redirect.
Some games saves may actually be saved in the game folder where steam installed the game (usually Steam/steamapps/common/YourGameHere).
i think the older dooms, and I know Septerra Core is saved in the game directory like this.
Just came across this discussion and your answer. The first person to point me to where my game files are after reading more than half a dozen others. THANK YOU!
Though, I'm not seeing the saved game files. Are those buried in there and named oddly?
And 3 years later, still being helpful.
In the same folders as if you were running them under Windows, Steam just creates them within the games wine prefix and those are under compatdata/<SteamID>/pfx/drive_c in the folder(s) containing your Steam library(ies).
