Terraria could be good as well for a sandbox title, but I'm not sure if you guys are into that. (nevermind, you said she doesn't like Minecraft, rip. At least consider it, I suppose)
I play both of those with my boyfriend from time to time. There's more, but I don't think it would fit the style you mentioned.

all are really fun puzzle games with a "small" amount of horror involved no jump scares or anything just feels like you will be jump scared
i should note the game lasts half as long if you only play 1 role The game has 2 roles and you get the full playtime out of playing both roles
