If I create a Collection, will I lose the "ALL" grouping in the left-hand column?

I don't use Collections at all, and have never created one. I'm thinking of quickly creating one and then deleting it for today's Steam Sale activity thing.

At the moment in the left-hand column of my Library, my games are grouped under "ALL". I've seen screenshots of other people Library's with Collections, and it seems that "ALL" turns into "UNCATEGORIZED" when there are other Collections the games could be in.

My question is if I create a Collection then delete it, will my game list on the left still have the title of "UNCATEGORIZED" or will it go back to "ALL"? (I quite prefer the latter.)

It will still say all.

There is an option from the drop down menu just above your list of games that says "Group by Collection". As long as that is not selected, it will show your games list under ALL.

You will only see an UNCATEGORIZED if that option is selected due to some games not being grouped into a collection.
