Custom emojis?
I saw some people using custom emojis on the discussions. By custom, I mean those that are not in the emoji list when I click on the smiley face. Is there a list of all available emojis somewhere?

In addition to what ceezus crisp posted, you can use unicode emojis as well.
Unicode emoji ....👽
Steam emoticon.....:365Cat:
So, I can only use a particular emoji if I have it bought from the market?

For steam emoticons listed in the link above, yes

For unicode emojis, just copy and paste them, they are free.

Technically you can get them for free if you craft badges from games. You'll need a full set of trading cards though. which again, cost money from purchasing on the market.
How does this trading card thing work anyway? I'm getting a few when I play games, but I never understood what I get them for, and what's their purpose.

Collect a full set, craft badge. Or sell them on the market, that's what I mostly do, free money. Only measily cents, but that's generally how free money goes.
So, selling trading cards. I tried, but Steam says that it is on hold for 15 days because I haven't been using my Steam Authenticator for 15 days. I installed the Steam Authenticator on my phone, logged out then in using the authenticator, but when I try to sell an item, it still puts it on hold. How to prevent it?

As you said yourself
because I haven't been using my Steam Authenticator for 15 days
That's why. As for how to change that, it says "15 days", doesn't it?
I just used the authenticator. I logged in with it, like, a minute before trying to sell the item.

Well, "just" isn't "15 days", isn't it?
Is there any official documentation about how this works?

Yes. It's that text telling you about 15 days. The text contains a link leading to more explanations.
