Updates and Mods
I have a highly moded version of Skyrim SE and I have kept my Steam client and game offline for a while now for fear of messing up my game. I really want to play some other games but fear if I put the client back online that it will mess up Skyrim. I want to play through the game and DLCs before I mess it up. Should I wait until I finish Skyrim or am I pretty much safe?

Most updates don't affect mods, unless you're using something like a script extender.

Last update for Skyrim: SE waas in November. As long as you have it set to only update when you launch it, you should be ok.

I did not get the November update as I specifically avoided it for fear of messing up the game. I don't have a script extender, so I am hoping that will be fine. I am guessing from what you are saying as long as I play Skyrim in offline mode is sounds like I am safe to go online with Steam and play some other games. Here I go with my fingers crossed. 🤞

Not really. When you go online Steam will automatically search for new updates of your installed games. It will schedule a update for Skyrim SE if a update is available.
Even if you dont download it and go offline again, the game will still be marked as " needs to update" and no longer run in Offline Mode.
That is at least my experience and i switch quite often between Online/Offline on Steam.

As long as it is set to not update until launch, it should be fine. If it is not and is set to always update, going online will trigger the update.

Sorry, cant confirm that. All my games are set to " update only at start" but they still get marked in orange in my library if a update is available and no longer start before its downloaded, no matter if online or offline mode.
