Okay, so I kind of get the market, its pretty simple, you buy/trade in game items for cheap $$$. I'm just confused on what gems do.

The gems were for an auction event that ended awhile back, but you can still use those gems and create a booster pack, or put 1000 together to make a sack of gems and sell on market

Thanks. That cleared up a bit on that... So I'm assuming I should not sell cards for gems?

I got the next part from
EDIT: It's a very old guide, once you get to steam gems you should probably skip it

Every 10 Levels earn 1 Profile Showcase to the max of 16 catagories as listed. Plus you can choose amoung your items what you want to showcase. That allows you plenty of flexibility to "mix it up" at any time on your Profile!
Leveling up also increases max friends by 5 for each level, at level 0 you start at 250, so at level 10 you'll have a max of 300

EDIT: throwing thiings in
When you get started, it takes 100 XP to get to the next level. The amount needed to level up increases every 10 levels, meaning after Steam Level 10 you'll need 200XP per level, after level 20 you'll need 300XP per level, etc.
there's more in that link

Well the first time you turn a card or something into gems you get a badge, but after that I woudln't do it.

Up to you. You can complete your sets, via trading or the community market, then craft badges with them instead. Most of the time, turning cards into gems gives you a very little amount of gems (6-40 ish).

Do this. Use a 3 cent item, turn it into gems for the badge.
