MMO is "massively multiplayer online", they dont exist in singleplayer. So what is it youre after? A MMO youncan play alone or a SP game with a huge world?
its hard for me to explain but even with your added information thats exactley what i want
a single player mmo rpg
(or atleast one that i can play offline)
where you can go around and trade items/buy and sell -(merchant)
or become a hero and go and slay the demon lord
- creating my own path in the world type of thing
any game along this kind of line would be appreciated

Fable maybe?
Most singleplayer games are not as far on the scale of sandbox style, you're looking for, so this is going to be a bit tricky...

Elder scrolls series, the last one being Skyrim, check it out. Its a sandbox game which, while having a plot, pays off the most if you go out and make the world your own.
Also, check out The Witcher 3, while it has a heavy emphasis on the excellent story, its written in a way that youll make your story your own.

got skyrim felt way to "simple" for me but it was fun with a few mods

fable felt way to oldschool as the controls go - just clunky and annoying

While it is not exactly the thing you mean, I just thought of the Suikoden series, especially the second one.
Was never ported to PC, so you'd have to undust your Playstation, but it might be worth a run for what you're looking for.

So basically a single player rpg. At any rate Divinity Original Sin 2 might be up your alley as it hits the points you're looking for including the setting. Pillars of Eternity is also very good. If you're not looking for isometric viewpoint though then I would agree with above posters about Witcher 3.
