you must be aware yourself (on some level) that its not gonna be all that helpful? lets keep threats as short as possible - they turn out to be more helpful that way.
First, to order things Alphabetically, click where it says "Games" at the top of the list. This will change the sort between A-Z and Z-A, as indicated by the small arrow next to the word.

As far as Catagories (Installed / Uninstalled) I couldn't find a way to do that automatically but you can categorize them yourself. Right click, set catagories, type the name (Installed) then Add Catagory.

From there you can just right click any game, add catagory, and tick the box next to the name of the one you want.

Any games you don't add into a catagory will just be sorted alphabetically into "Games' below Favorites and Installed.

How much of a pain this is gonna be tpo set up really depends on how many games you keep installed at a time. If its alot, I'd probably reccomend using a third-party app like Depressurizer.
Also! Just remembered, for threads to be the most helpful, when you find an adequate solution you can mark your topic as solved and it puts the solution you select right under your question.
This is an excellent workaround, for people having few games installed.

Still, i would like to keep this open for a bugfix by steam. As mentioned i did buy quite a lot of games via steam and i resent being punished for that by having to install an addon and the fiddeling that comes with that.
The Steam Client HAD the exact feature set that was helpful and they willfully removed it. It should be as easy to put it back in...code usually doesn't age that fast.
<SIGH>....i know this is gunna be a fight versus windmills, but i am sick and tired of updates in Software Development that don`t bring added value, but only do things different...and usually worse....i would like somebody with a working brain, employed by steam R&D to take a look at this...
Software is supposed to make our lives easier people.

The alphabetical ordering system of games was never removed. You probably accidentally clicked "Last Played" in list view.
Let it go dude, and relax a bit. If you don't want to see other options for the listing, just use "detail view" as that is always alphabetical, and you can still use custom categories and favorites.
What i needed to do to fix this:
Listing was ordered by last played:
1. right-click "Games" Collumn header of the Games List
2. deselect "last played"
3. mousover "LIBRARY" - select Tools
4. mousover "LIBRARY - select Games again
strictly speaking Step 2 should have done the trick, but nothing happened to the
sorting order (I even tried a steam restart). Also pretty sure i never "misclicked" the
"last played" option on, but what the heck...
