because EAC is absolutely required for a good number of online games. Deleting it isn't going to 'help' you at all, because it'll mean you are not going to even be able to PLAY.
If you're on a new PC, install all your proper drivers. Macbook air is not a gaming pc, lol. It's a mac, and they're *not* gaming devices no matter how many times frothing fans declare it.
Given the rest of what you've said, you have a crappy mac laptop that cannot possibly keep up with the needs of the games you want to play on it. Whether it's a nice mac ... well, whatever? But it's overheating and not able to run EAC properly, so... not a gaming machine. Play on a PC.
Here you can read about EAC.

Of course, if there is no lobbys/servers where you can play without EAC then the game will refuse to load the multiplayer. There is a really good reason for EAC (or any other anticheat) to be active when you play multiplayer games.
No, you can not move your games and make them not need Steam or EAC and for the record, Valve is not to blame when a developer choose to use EAC in their games, the developer is free to decide what kind of anticheat they want to use.
Only way to get DRMFree games is GOG, have you looked if they are selling said games.
Thank you, I guess now all I can do is play other games that do not involve EAC.
It is very sad, because most of the games I play do involve this. And it is more sad that more of my games now use it as well.
