If you want to play it but dont want to give EPIC money, just wait till it comes to Microsoft´s Gamepass for PC.
A few other Epic exclusive games are already on there, like Metro Exodus.
You pay ( currently during the BETA) 3,99 for a month and can download/play all the games included in the Gamepass as long as the subscription runs.
Play Outer Wilds and then just cancel the subscription again and then buy it later when it comes to Steam if you want it in your collection.
This way EPIC wont see a single cent from you.

Buy a key for the game and activate it on EPIC. Just like on Steam, they wont get any money for key activation.

Lol. You're pretty much alone with that, considering that the publisher gets his money either way: just like games purchased on Steam will make Steam pay something like 70% of the purchase price to the publisher and only keep 30%, Epic does something similar, just with different numbers.
I don't know how keys work on Epic, but as far as stores go, it's the same thing: the publisher gets x% of the price, the store keeps the rest. I'm generally assuming that other game stores can't take 30%, so it's probably less.
Anyway it's a moot point as I don't think there is a physical edition, nor do any trusted 3rd parties sell it other then EGS.
So wait for a sale, or wait for a year.
I am not talking about shady resellers like the 3 letter one or the Penguin.
I talks about licensed resellers like Greenmangaming and such.
