Permission issues - some games can't write save files
From sometime to now, I've a problem that I don't know how to deal with. It started with Dark Souls 1.
The game coudn't save any new savefile or change a already existing savefile. I've played the game before, on another machine, so I did have a char stored in steam cloud. I created and played with a new char, then it disappeared when I went to play the game again.
I thought that it could be a bug in the savefile itself, so a copied the original save to another folder and deleted the actual savefile. I did expect the game to create a new one and this new save to work correcly, but the game started to stuck on inicial checking save screen. I tried to look up for some help, but ended giving up. This was the first time a had this problem.
I've played some other games too. Some didn't have any issue like that, like GTA V.
But I've had saving permission problems with Don't Starve Together and The Binding of Isaac: Rebirth. Both games didn't even let me play, saying that the save directories couldn't be written/ I've no permission to write in the save directory.
I'm the admin, so how the ♥♥♥♥ I can't save anything where I want? I've tried a lot of solutions.
Running Steam as adm, running the game as adm, manually checking files properties, reinstalling the games, checking integrity, maybe more, I've a really bad memory e.e
Did another one had the same problem? How did you solve it?

For Windows 11:
Select Start > Settings > Update & Security > Windows Security > Virus & threat protection.

Under Virus & threat protection settings, select Manage settings.

Under Controlled folder access, select Manage Controlled folder access.

Switch the Controlled folder access setting to On or Off.

Windows 10:
Select Windows 10 Settings -> "Update and security" -> Windws Defender -> Open Windows Defender Ssecurity Center -> Virus and Security Threat Protection -> Virus and Security Threat Protection Settings -> Scroll down and turn off "controlled folder access"
