How can i switch my operating system from SteamOS to Windows 8.1? I have a usb drive with Windows installation on it.

Depends. If you have a Steam machine you should not. If you installed Steam OS on a PC you can.
The Windows flashdrive (your USB) has the option to format your disk to a clean state. Then you can install Windows. Just follow directions from the Installation wizzard.

If there's enough free space on your HDD or SSD, you can opt to only format part of your disk to have a multyboot machine with Windows next to Steam OS. Mind you, when previously you had only a C:\ partition, no D:\ or up, you need other software to format free space & make another partition to set up multyboot.
If/when you have more partitions, you can simply select 1 or more partitions from the Windows installation menu to format for use with Windows.
If/when you have enough space you don't need anymore for Steam OS, the Windows formatting option will give you possibility to format partitions to your needs.

Would Windows 8.1 just be a clean cut install from the USB flash drive just like any other installer? I wouldn't really care if my hard drive was wiped, i just got the machine like two days ago and i already dislike SteamOS. I have a 1TB hard drive. I dont want to dual boot because that's to complicated.

Would Windows 8.1 just be a clean cut install from the USB flash drive just like any other installer? I wouldn't really care if my hard drive was wiped, i just got the machine like two days ago and i already dislike SteamOS. I have a 1TB hard drive. I dont want to dual boot because that's to complicated.
Then go ahead. It is quite siimple, just boot from that USB.

Do you have a valid Windows product key to go with that install? The Steam Machine does not come with a Windows license.

Yes i can but the question is off-topic here. Besides, Steam in general would not be the right place. Although presumably there's some special learning software for you in the Steam Store. Go to their forums.

Yes i do, i purchased Windows 8.1 Standard with the Activation key on a USB drive.

It's just a simple install too, all i do is boot it up, press F2 to get to boot options, run it on the USB drive, install Windows and then remove the USB. Correct?

Yes. Remember to wipe the existing contents of the hard disk.
