How can I change executable path in steam games?

For example, I just have Nights of Azure. The appinfo.vdf says that the default executable for that game is "CNNLauncher.exe" that opens the launch box of the game. My goal is to skip the launcher and just play the game for steam's big picture uses (with just the controller). I just tried to rename the file into "CNN.exe", (the one that launches the actual game) but it didn't work because steam updates the file every time I open it.

Is there any way to change the executable in the library WITHOUT CREATING A NEW SHORCUT in steam library?
