Good intro to roguelikes?

I think this is what the genre is called: "make incremental progress, die, restart from the beginning with slightly better stats or equipment, repeat". Try as I might, every example of this game I've played I've loathed.

Void Bastards was nice because I loved the artistic sensibilities but it couldn't carry past the dull gameplay loop.

Any prime examples of games in this genre I should take a look at if I want to change my opinion on them?

That's not even remotely what a roguelike is. What you are describing is a roguelite.

Cult of the Lamb. I'd call it an action-management game, it's a colony sim with roguelite-style dungeon raids. The difficulty is somewhere between easy and medium.

Because both are completely different types of games? Duh.

when I think about easy to play roguelike game its Dungeons of Dredmor. you have to make a run against boss by clearing set of levels and leveling your skills/gear in the process. If you feel it's getting harder and you need to grind for additional power you can jump into dimensional dungeon (there's a list on the web for codes to working dungeons, you can visit as many as you want thus can make very powerful toon or visit none and rely on your skill)
