Good intro to roguelikes?
I think this is what the genre is called: "make incremental progress, die, restart from the beginning with slightly better stats or equipment, repeat". Try as I might, every example of this game I've played I've loathed.

Void Bastards was nice because I loved the artistic sensibilities but it couldn't carry past the dull gameplay loop.

Any prime examples of games in this genre I should take a look at if I want to change my opinion on them?

That describes incremental type games more than actual rogue-likes.

Rogue-likes are by nature a random-generated dungeon/map, more often than not with a perma-death function. A good one you can get for free is called NetHack. It's one of the oldest still-developed games, too, but it can also be quite unforgiving.

What you described is a rogueLITE, games which are rogueLIKE are always a hard reset, no metaprogression. I personally would suggest

The roguelite genre in general is not particularly casual and usually its games fall into the "easy to learn, hard to master" category. As long as you know that you'll be dying a lot before beating the game for the first time, it's not hard to recommend and pick a good starting point.

Slay the Spire and Monster Train are good if you like card games, or even if you just want a rogue like that allows you to take your time to plan your next move.

Technically they are all roguelites, but I liked it a lot. I played it on Switch (I didn't have a Steam Deck yet).
