Sharing only specific games I chose for family members
I don't want to share my whole library.
But it looks like Steam only share the whole library.

I tried to turn on 'Family View', I selected games, I set a PIN. And I invited a person as a child. This way, can I allow only specific selected games for family members?
But I still see the whole library with an added adult member account. Is this because of this account is an adult member?
Can't this prevent to show every game to a child member?
I cannot see the child's screen, because this member is not in my country.

Well how are you using family share across countries? I am pretty sure the new system doesn't allow for that.

Oh, really? I didn't know that. I am gonna check information again.
The new family share system requires all participants to be in the same Steam Store region.
They only way to prevent others from playing certain games is to mark them as private.

You are confusing two different Family options on Steam.

Family View is when you have a child in which you create an account for them to use, and you restrict that account's ability to use certain areas of Steam or the games it is allowed to access.

Steam Families is the new library sharing program within Steam where you can have up to 6 accounts merge their libraries together and access it all as one larger single library. It also provides parents a single interface to enable the same restrictions that Family View can provide.

If you set up a PIN and selected games, you most likely did this on your own account, treating it as the account that you want to restrict. If that is the case, you might as well remove the PIN to avoid the hassle of unlocking your own account when you need it to be.

The Family Management screen is where you can restrict games that a child can access from the Family Library.

You go to the Family Management screen.
Steam > Settings > Family >> Manage your Steam Family

Click the down arrows next to the child to expand their entry.

Toggle "Enable parental controls for this user. "

A much larger set of options will open. Here you can enable the same Family View type restrictions that the PIN process controlled remotely on the Child account from the Family Management screen.

Top option is "Available library content".

Toggle "All games" to "Only games I choose".

By default, all games will be selected. There is a "Allow all" and "Deny all" button, and each game should be highlighted with a blue border signifying that the game is "allowed". Clicking on a game toggles the border and whether or not that child account is allowed access to it. As soon as you click on the game title, it's status is instantly set. Go through the list toggling those games as you see fit.
