Or if you had a short internet outage at that moment and didn't even realize, it will have the date when you personally unlocked it for you, but the date when steam servers got the next update from your machine seeing that you've already got it, will be their date when it was unlocked.
Never once found a fix and I've been looking for years, I think it's something to do with Steam's database not refreshing properly. Like you said my Steam client achievement timestamps are different to the web browsers timestamps because sometimes they don't unlock until I exit a game.
I found a thread like this issue ages ago but no one seems to know of a fix.

This is my exact issue. Started a fresh account to make sure it wasn't my account and it's still happening here. Gets pretty tiring refreshing my profile after every achievement to ensure the timestamps are correct. Not much you can do if it happens during something like a call of duty easter egg or a speedrun where you could end up with impossible achievements at the same time
