My kid has basically taken over my account for games on my computer, would it be possible for her to create her own, not as a family share, but her own and transfer out the games they has bought and played for herself?

Make your kid their own account, then family share with your own, making theirs as a child account so you can have parental controls. You can both play different games from either account simultaneously.
