Well, it's not like one can actually run dry on good games on Steam anytime soon, so I play different games depending on my mood, switching away from a game after completing it.
NetHack. I've been playing it off and on since the mid 80s. Other true roguelikes, too, but that's the main one I play. It pretty much defines the roguelike genre. No game is ever the same.
I've been playing Sid Meier's Alpha Centauri off and on since the late 90s. I never go long without it installed on my hard drive. To a lesser extent, Civilization 4 and Master of Orion 2. They all have the same addictive "one more turn" gameplay that 4X games are known for, but SMAC is insanely addictive.
And, of course, Heroes of Might & Magic 3. It's one of the best games ever made. The graphics, sound, gameplay... it all just comes together in a perfect 10/10. The rest of the classic series are great, too.
