Chess. Shame there isn't a good version on Steam.
I have a lot of games I like, but forever? Every game I've played has a finite amount of time I'm willing to spend with it before setting it down for later. Which is fine, because I've only got a finite amount of time on this planet anyway. Forever is much longer than that.
Used to be TF2 for me, then became KF2/PD2 (lots of 2s in that list). Since my mental health got better (way better, in fact), none anymore. Simply can't get myself to sink hours upon hours upon hours upon hours into the same game anymore.

Well, it's not like one can actually run dry on good games on Steam anytime soon, so I play different games depending on my mood, switching away from a game after completing it.
Tetris, Sonic the Hedgehog 1 and 2, Super Mario 1, 3, World, New 1, New 2, Mario Kart 7, 8, Pac Man, Galaga, Galaxian, Gaplus, KoF 98, 99, 2003, XIV,XV, SF5, Sam Showdown Reboot, and many more.
You could probably determine which game I could play endlessly based on my most played games, if you’re willing to find that information yourself, mr dataminer
Bethesda games. I like pretty much all of them going back to Terminator 2029 in 1992, but I think Morrowind was their peak. I guess exploring open worlds never really gets old, especially with mods.

NetHack. I've been playing it off and on since the mid 80s. Other true roguelikes, too, but that's the main one I play. It pretty much defines the roguelike genre. No game is ever the same.

I've been playing Sid Meier's Alpha Centauri off and on since the late 90s. I never go long without it installed on my hard drive. To a lesser extent, Civilization 4 and Master of Orion 2. They all have the same addictive "one more turn" gameplay that 4X games are known for, but SMAC is insanely addictive.

And, of course, Heroes of Might & Magic 3. It's one of the best games ever made. The graphics, sound, gameplay... it all just comes together in a perfect 10/10. The rest of the classic series are great, too.

I'm not buying any dlc until they fix multiplayer server for bannerlord
