It is also noticeable for me much of the times when a game has an FPS drop, even if it stays above 30. I find it mildly alarming; I just can't seem to shake that thought that the game might crash or something.
I wonder if FPS preferences change with display size and/or resolution.

Get a 144hz or even 120hz monitor and you will see how wrong you are.
In FPS games the difference is insane, in other games with a third person perspective is not as noticeable, you definitely can see more than 24, even more than 60, and once you get used to seeing 100+fps, a 60fps game looks choppy af.
