some nice suggestions have already been mentioned, I guess. I'll just add something new here:
I always loved Elder Scrolls Online, but for me it's too much grind (and a bit p2w, I guess), but it's an awesome one if you just want spend looots of hours :) has a huge world and lots of quests and grind :)
I've heard Black Desert is grindy, that's THE only reason I've kept away from it, otherwise I'd be there 24/7 lol.
I've spent lots of time enjoying both Mabinogi (the anime one, a bit old, but hella awesome with lots of things you don't realize from the start) and Vindictus (technically Mabinogi Heroes), which is more like Action RPG and could be played solo, even though it's an MMO.
Neverwinter Online is a blast. Would come back and waste my life away haha.
Otherwise, if we're not just taking pure MMORPG, I'd really suggest trying some openworld craft survival games on private servers. Like for example take Ark Survival Evolved and choose a good server (pve only is my preference, but whatever) with a good community, you'll have TOOOONS of hours to grind at. So much content, it's impossible :D
Or similar stuff can be said about Valheim, Conan Exiles, 7dtd and some other popular games in this genre. Lots of hours, lots of grind, build huge bases, level up, tame dinos/pets, etc etc. My fav genre of latest years. A good server with good mod setup is a blessing for them. Or play alone, but that's not what the topic was about :D
