I avoid EA play because I'd rather pay for a game once than monthly.
Origin has been around for a while. I only really started using it because Mass Effect 3 required it.
keep in mind what subscription you buy (i.e. xbox game pass, ea play on steam/origin), it'll only work on a specific platform and can't be merged together

anyways, if you really wish to go ea play, i suggest you do your research first honestly on what games are and the likes of it because it can really depends but the same for subscriptions since most of these do offer a free trial but a few don't,,
To answer 1st question, yes you can play with other users via Xbox pass on PC, Steam, Epic, and Origin, they all use Origin as the DRM to connect with each other, and if EA does cross play via console with their EA Games they too will be able to play with as well.
Your 2nd question, if you sub to EA play via Steam, your EA play only applies to games that via Steam only, so if a game not on Steam, then it's not part of EA play on Steam. If you want certain games that only on Origin, you get EA play via Origin instead of Steam. Yes you can cancel any time, the moment you sub, you can cancel the renewal on the spot, the remaining time stays no matter what since you paid for it. Xbox game pass include EA play free of charge, you can see what games is for you. You be required to install Origin regardless, and have to launch it via store you using EA play from, that means if you using Xbox game pass you need to launch game via Microsoft Xbox game app, which then launches your origin and your game.
For your 3rd question, when you sub for EA play via Steam, you don't have to worry about redownload via Steam, if the game already downloaded you just hit play, if haven't been updated, just restart Steam, and then should say play.
Please note when your EA play sub ends, you lose access to the games you do not own at all, that means if you use sub to gain access to play said game you did not buy, you lose access to it, if you have bought the game, then you keep that game no matter what.

You have to check each individual game as its nothing at all to do with the service.

If yes, ensure you're on the right EA account your have redeem the game on, there is no automatic account trasfer for EA games, that why need to use same EA account you redeem the game on, with same Steam account that it tied to for the game, use any other, and won't work. You can check your EA account as well that show your library that has Steam games tied to it that you have redeem the games on.
