What is really happening to Ubisoft? I've heard that they're having some financial problems or something... Do you think our catalogue of Ubi games on Steam is endangered, that Ubi can go bankrupt or something and their games will be removed? Anybody know anything? How serious are their problems?

The most likely scenario is that they'll have to significantly downsize. They're still making enough money to stay alive but they're almost certainly going to have to downsize and cut back. I don't think we're in danger of them removing their games; they're in dire straits, the last thing they should do is cut off their current flow of income.

That said, it wouldn't hurt to buy the Ubisoft games you're interested in, just in case they try to pull a stunt. It also wouldn't hurt to have a DRM-free backup copy from a different service (won't name names, don't know if it's particularly allowed on this forum) so they literally can't take it from you, but then you might be buying games twice, which not everyone can or wants to do. Buying it here should be enough, though.
