Ultimate contains the DLC bundle (2 DLC already released, 3rd DLC to be released, and a pack of consummables to help start) in addition to the early unlock of the armor sets of the Deluxe (but just the DLC bundle is worth more - $25 - than the extra cost of taking the Ultimate over the Standard - +$20 - so you're not paying for something you shouldn't pay for).


Ultimate is the best option as you get everything for $60.
Standard is the alternative option, for if you're not sure to want everything (then you can simply get the DLC bundle later if you change your mind and want to have everything, but in the end it will cost you $40+$25 so $65 instead of $60).
