How to not allow some games to appear in the library of others?

Make the game private on the account that owns it and it shouldn't show on other's accounts.

Right. Specifically, right click on the game in your library. Go to "manage" then select "mark as private."

Depending on WHY you want to do that, as I understand it, the new Family stuff also incorporates the former Family View. So, "adult" accounts should be able to manage what games can be seen on "child" accounts.
