If you like to watch gameplay, go to YouTube.
Most games will not allow AI as that is a botting program and use of it is a violation of the ToS of MANY games.
Also the devs are not obligated to make a game playable for everyone. Either difficulty wise or physical disabilities, that is not a requirement of their job.
That's easy to say when you're able enough that you can control the gameplay yourself.
OP, have you tried reaching out to Ablegamers and seeing what advice or suggestions they may have?
I don't expect developers to cater to every single person and their needs, but it's always nice when they do think of people with disabilities and add accessibility option or ai. While I could watch Youtube or twitch its not as fun to me because i do not get to pick the players, match type, etc. Also there are a lot of companies including AAA's that do have AI and it is not against policy, but they do it for people with and without disabilities as some people just like to watch how things would play out and just relax. Such as WWE 2k24, NBA 2k24, Quake III Arena allows for bots to play against each other, the list goes on and I do indeed find it very entertaining and fun to watch. I hope you are well and am glad you are still able to play your games. But please don't forget there are other people that need a little extra help to enjoy the same opportunities.

If you don't meet those requirements, you may need to look into different hobbies.
I'm not trying to be mean, but you need to look at it from a realistic perspective.
Think about it. Majority of games are DESIGNED to need the use of your arms and hands.
Unless you can get someone to rig a DDR play mat to act as your controller, your kinda out of luck.
Like I said, if you enjoy watching the gameplay, go to YouTube and find some gameplay videos.
Majority of games will limit bot usage to single player content due to the ability to use the bot to cheat.
And if the devs let some users use bots, they have to let everyone use them to remain fair.
I never mentioned bots and I will never give up on my hobby! Often times my wife will help me and play as my hands while I tell her what to do, she is very sweet to do so and I am very blessed.
I was able to find some interesting things here though like software that converts the webcam into a head tracker for mouse movement, as well as some other companies and stores that specialize in assistive devices/ADL aids. I know it’s not exactly what you’re looking for but hopefully it’ll at least give you some options.

Any sort of program that automated gameplay is a bot.
And use of bots in any sort of multiplayer use can result in a game ban from MANY games if not ALL of them.
Thank you very much for your empathetic and kind response. I will definitely have to take a look at that website and see what is available. I know AI may not be quite up to where it can do what I want it to, but its amazing as it is already and I have no doubt that eventually it will be able to. I don't know if you've heard of neuralink that was made by Elon Musk. It is an implant you can have put into your brain to control computers and even play games among many other possibilities. I highly suggest you give it a look as it is very intriguing so far there has been one human subject and it has gone very well with him. Anyway, I wish you well and thank you again, God Bless!

The OP is asking for game suggestions, not your opinion about gaming as a hobby, nor have they said anything about using AI in multiplayer games. Maybe sit this one out if you have nothing useful to contribute.

Mainly, you make choices via multiple-choice questions and then your character moves on their own. There is some progression with getting better items, even if you have to start a run over. Not sure it's what you are interested in but maybe check on some gameplay on YouTube to see if you might want to give it a go. On sale right now!
Yep I heard about the neuralink, fascinating bit of technology. If it wasn’t still in the experimental phase/super expensive and still in trials I’d have brought it up too haha.
