Elden Ring is the easiest of the Fromsoft "Souls" games. Unlike previous games, you don't even need to beat anything to unlock the ability to level up, you just need to reach 3 different over-world fires. Likewise, you can farm skulls, and other items in the field to level up with (selling them to vendors), this means gaining the first few levels can be down without fighting if you so needed to.
After that, for most mobs it's just a case of learning by rote, which in turn will earn you enough to level up if you're careful. Bosses can be a challenge, but even with little to no inherent skill, you can eventually beat them through perseverance. I truly suck at these games due to poor sight, etc., but was able to beat the first boss after about 50 hours of play. There are certain "helpers" you can unlock along the way, such as summons for particular fights and ghostly companions, like a pack of wolves. Each designed to further ease players into the game.
The real question isn't if you think the Elden Ring is too hard but if you're prepared to play it for the time you might need to start feeling you can progress -- honestly, you'd probably beat the first boss far quicker than I did.

I returned to it after the 2.1 update and used Nvidia optimisation for my then RTX 2080 setup. (FPS around 110). I found the game overwhelming, initially, what with main story, side stories and side missions. The visuals were also overwhelming and at times distracting, until they became the "norm" for life in the city. Then there's then the decisions to make when upgrading abilities, I went for intelligence and mental skills rather than physical ones because I don't have great keyboard/mouse control. For me, it got easier as I developed my attacks from afar using the cyber gear. I also got into the side story relationships.
I now have an i9, RTX 4080, 4k predator monitor setup (FPS around 90) and the visuals became even more detailed and awesome. I searched online for info that helped .. looting the dead sometimes gives perks or skills exp. Any looted stuff can be sold or dismantled for use in crafting.
In short .. loot everything!
I prefer open world games where it's my choice to continue the main story or to do side missions to improve my characters skills before doing "hard" stuff.
I'm currently playing Uncharted 4 and am finding the chapter led story a bit repetitive.

I put three hours into it and just lost the will. I will definitely revisit it. I started DAI and was a lot happier.

Dark Arisen has the best magic system of any game ever, and it is basically an open world action RPG, but not as hard as Elden Ring.
Shadow of Mordor is basically Arkham Asylum but set in Lord of the Rings.
