Controller Joystick Drift on Steam Deck when docked.
I have been trying to play the steam deck docked and I have an issue. Whether I use a monitor, or tv. Any controller I have tried has horrible lag/drift with the joysticks. I have tested Xbox, Nintendo, PlayStation, and 3rd party controllers. Has anyone come across this and found a solution?

There is no such thing as stick drift, when used the material sheds dust into the sticks cupping. The N64 controllers were notorious for it so try cleaning it out. If you have a can of air gently blow out the cuppings the sticks are in.

Wrong, stick drift is a thing on controllers that use potentiometers for the analog axis.

The potentiometer tracks can get covered in gunk (that requires disassembly to clean).
Worst is when a portion of the track gets worn down, causing jitter and drifting (this can require replacement of the potentiometer or the whole analog assembly).

Does the drift happen with the controllers on other systems?
It might be a calibration and/or dead-zone problem.

It only happened docked and no they work fine in original systems. And they also work fine when the steam deck is not docked. I even tried turning off rumble as I read it could affect switch pro controllers. I would say it is more input lag than drift as the analog sticks work fine for a moment then if I turn left for example it will continue after letting go.

Does 'lag' also happen in the test section of controller settings?

I tested for that I could not get it to recreate. Only seems to happen in game.

It could be the controller profile that's set for the game.
Does it happen in one game? If not do they all use the same controller profile?
Don't have Steam deck, but had this problem awhile ago, and just had to tweak the sensitivity settings and that solved it.
My left controller numbers are all over the place in controller testing. For me to get my left joystick into a 0,0 dead zone, I have to physically hold the left stick in a dead down position.
