Does anyone know if a gift card code is enough to prove ownership
Recently I've been wondering if virtual gift card codes are enough to prove ownership of an account, since that's the only way I buy games I don't know any other way to prove ownership

Emails with confirmation of a purchase also can work.

Support usually asks for the first transaction receipt/CD key on the account or if that is not available, the oldest you have.
The older the evidence the better the chance they will accept it as ownership proof.
So a gift card code/receipt from a few weeks/months ago will probably not be enough, a receipt from a few years ago has a much better chance.
Mind you, that is only one thing they ask for, usually in combination with email used to create the account , other payment methods registered to the account, game keys and so on.

A single piece of evidence, no matter what will rarely be accepted as enough.

Best option and according to the support article provided by cSg|mc-Hotsauce is showing the code of a product activated on steam, long time ago they asked me a picture of my TF2 key (the one in the DVD i bought in 2008)

That's up to support, did you open a ticket with them?
