32-bit games
On some games I see something that says "Starting February 15, 2024, the Steam Client will no longer support 32-bit games or macOS 10.14 or lower." Does this mean that 32-bit games will be removed from the store altogether?

Not sure if they will be removed but this is only in reference to MacOS supported games. It would be up to the developers to decide whether or not to repack their games with 64-bit support if they don't already.

Mac OS beyond 10.14, does not support 32 bit applications.

Presumably, the Mac Steam client will be requiring 10.15 or higher after Feb 15.

Therefore, you won't be able to run any of your 32 bit games after that date, if you update both your OS and the Steam client.

(I updated my OS to 10.15 a few years ago, for another piece of software that required it. All my old 32-bit Mac games are still listed in the Library, but they won't run. And the odds of old games being updated by their developers, if they haven't been already, is pretty low.)

Have you tried using the launch command -CPUCount:1 to run the 32-bit games? I have had some success with a few older games by putting that in the Steam launch options.
