What happens if I sell more than 2000 usd in steam market?
I know there's a steam balance cap of 2000 usd, but what would happen if somehow I sell 2 knives in steam market, one worth 2k and the other one worth 1k after taxes?

You wouldn't be able to sell the 2nd one once you sold the first that maxed the wallet limit.

You cant. If the sale of the second knife would raise you over the 2000 dollar limit in wallet funds you will be skipped and the next person offering the knife selected as the seller.
If there are no other sellers for the same item you will get a notification that it could not be sold because it would exceed your max wallet limit.

Also read the highlighted parts...

What kind of Steam Wallet and item listing restrictions apply?

Currently we are restricting Steam Wallet balances to $2000. In other currencies, the limit will be set to a value close to $2000. We also limit the maximum price of a single listing on the market to $1800 (or similar for other currencies). You will be restricted from listing items for sale in the Community Market if the existing balance in your Steam Wallet, plus the sale price of the item(s), would together exceed the $2000 limit. We may be adjusting the Steam Wallet balance limit, or otherwise changing this restriction, in the future. Note that, if you have multiple Steam accounts, balances for all Steam Wallets associated with all of your accounts will be aggregated for purposes of applying this limit.

No not personally but i read statements by others who it happened to.
But apparently now you cant even list 2 items to sell if their combined price would exeed the wallet limit.
Which is a much more reasonable approach i think, you cant even list over 2000 dollars that way.
