The Witcher 3
I don't recommend skyrim much, but I also played it once, the problem with bethesda games is they make a good 'play it once' story, but they make the base game so mind numbing that the story doesn't hold you, and 6 months later when you go back in, it's the exact same ♥♥♥♥ again but this time the story doesn't keep you interested so you require mods.
I do recommend daggerfall unity, its a bit of a pain in the ass to play till you know what to do, and a full character set up can take a while, but damn does it feel good entering dungeons and exploring and never really seeing the same one twice.
really wish daggerfall got modded to hell and back and not morrowind/oblivion/skyrim

You can also try a game where the enemies don't scale like Risen, if you can somehow beat the Over leveled monsters you can access areas before your supposed to, but once you level up and get better equipment, they will be easier to fight.
ill make an argument that you playing as geralt is better, no rpg gives you every option you want or can think of, so having all game play be based on 1 character like this lets the developers focus on the story paths for the routes it lets you take while makeing there be no truely bad/wrong path you can take.
(re: Witcher 3. I don't mind playing as a "pre-set" character. I just don't like *Geralt*. Can't stand the jerk. :D So I skipped W2 and W3)
