- Yes Steam ending support, not blocking, but ending support for Windows 7 ~ 8.1, so when their next update roll next year it may have issues, or flat out not work via Windows 7 ~ 8.1 which there only option is to use supported OS.
- Yes can still play your games you bought, can simply upgrade your OS to windows 10/11 for free yes this is still going for free by microsoft. Or can dual boot if that what you wanted to do either way works.
- If you don't want to use Windows 10/11 no matter what, then there Linux which is also free.
Now to explain YES you CAN change the GUI of Windows 10/11, to look, and feel like another OS using powershell this has been a thing for YEARS.

Your only options are:
Upgrade to Windows 10/11
Switch to using Linux/get a Steam Deck
Download all your games, disable Steam update functions (there are instructions on other threads about this matter) and put your Steam client permanently offline before 1 Jan, 2024.
Don't do anything and Steam client will cease to function on Jan 1, 2024 until you upgrade to Windows 10/11, switch to Linux or get Steam Deck.
Windows 7 and 8.1 are Obsolete and Unsupported
You have just over 7 months before the change goes into effect. You have plenty of time between then and now to become comfortable with Windows 10 or 11 so that it becomes your routine. Given your aversion to change, you're probably better off going straight to 11 as we'll just have to go through this again when 10 eventually stops being supported.

Windows 7 is not a Hack Hole... Valve is just lazy and dont care about their community.
To answere to OP. no you will no longer be able to use steam at all in 219 days..
I have the same problem as you.. still windows 7 users here because Linux is far from being a Gaming O.S. and Windobe 10 is just a badly designed O.S. that is frustrating to use as a daily routine.
IF valve really put us in the garbage, i hope someone will be able to make a fix for their lazy attitude.
Security is not the problem here.. the problem is because windows 7 is not traceable as windows 10. and as with the Mask during the Plandemic.. the elitist of this world want to controle everyone..and windows 7 is not privacy intrusive as much as windows 10.

The community is becoming a mess with tons of posts about the same thing over and over when OPs could've used one of the posts already created to talk about their POV, but no, they want to created a new topic to talk about things we already talked about.
Also it's hijacked not hack, most common misconception when one does not understand the terms of the words. Hack would apply meaning either end user is compromised, or service/site is compromised, and so far majority of it is related to end user getting hijacked because they gave their account to scammers.
Now hating an OS simply because of GUI is pretty silly, I posted a video above to make it look, and feel like windows 7 if that all you care about is GUI.
If you're worry about privacy that badly there shutup10 privacy tools, but if you're super paranoid, then I got bad news for you with your tin foil hat, as Windows 7 is not private as you assume, I mean if your that paranoid then you would be setting up your own proxy/VPN network, your own firewall, and be using Linux to VM windows which shouldn't be problem you're complaining about really to begin with, as well living off the grid to hide away from everyone so badly. I mean ISP watches what goes on, the sites & services you use collect data, even your OS.
