You can run windows 11 on an Dell Inspiron 1012 netbook which has an Atom processor with 2 GB of RAM
Guess you haven't played Fortnite. Also they are in the process of phasing out support for 7 & 8 just like Steam. Their store runs on the same version of Chromium that is being discontinued as Steam runs on.
Not to mention every single game still runs perfectly fine on Windows 7 & 8 on steam...
GOG doesn't make Galaxy mandatory like Valve did with Steam. You can keep your old installers if you downloaded them in time. However a problem still existed without the involvement of a launcher.
Fornite already dropped windows7/8 support 2 months ago as part of their Unreal 5.1 upgrade

You can only downgrade GOG games via GOG Galaxy, because the web installers only work to install the latest version.
