Since Skyrim is sort of medievalish fantasy, how do you feel about medieval history? It's not a similar game but I do highly recommend you give Crusader Kings 2 and/or Crusader Kings 3 a try. They're incredibly immersive and you can easily play all day & night without even realizing how many hours have gone by.
Plus, both games have Skyrim/ Elder Scrolls mods and many others.
Honorable mention to the original Mass Effect trilogy. I probably have comparable hours in it, and I love the universe.
Neverwinter Nights 2 is also an old game I go back to every few years, but these days I think you can only get it on GOG.
