What games have a large number intricate IN-GAME controls?
I want games where there are a lot of the controls (buttons, switches, levers, screens, dials, etc) that are not necessarily used on the keyboard but somewhere on screen/in the environment that you have to operate manually and are typically used to operate a vehicle (but doesn't have to be, like Project Zomboid and others that you'll see below). A bit like what DCS, MS Flight, and X-Plane are, but I'm not necessarily looking for hardcore flight sims (but if they're unique/interesting, then please). Games like Stationeers, Carrier Command 2, Singal Simulator, VTOL VR, IL-2 Sturmovik, Delta V: Rings Of Saturn, and Duskers are all games that I love and all have tons of instruments that give live information and controls that I have to operate myself. I am NOT looking for RTS games.
Bonus points if I need a manual to operate this device/vehicle (this does NOT mean the game has to be grounded/rooted in reality), MASSIVE bonus points if there's embarking/disembarking from the vehicle/facility.
Anyone else share the same itch and have suggestions?

Might not quite fit, but have you tried Children of a Dead Earth?
