But i am saying, not play in offline as if you set your activity to offline.
You have to go completely in steam offline mode i think.
But OP said set status to offline. Playing with status set to offline, but otherwise with Steam still connected online, will fully count all hours towards your profile's statistics. All achievements are earnable as well.
Problem with this approach is that your Achievements and games played are still visible in the Activity and player profile feed. You would need to set your game list to fully private to hide these from everyone including friends.
Of course, you can try playing these games in full offline mode. But people can still see these games in your game list unless you make it private.
Oh yeah good point. OP has to make sure his Steam is Offline (Offline Mode) and not his status set to appear offline. When I was playing my games it was in Steam Offline mode where you can't even see the store page if you tried because steam is offline.
Why do you even need to know the reason, it literally should not matter. OP asked a question and needs an answer, not this non sense.
