Completely stripped down barebones and quite unsafe (when used as web browser) chrome.

I don't trust any browser that won't allow me to use uBlock Origin.

uBlock Origin is a start, as long as it's in advanced mode with the noscript settings, but you also need strong cookie controls and a user agent spoofer and can completely disable html5 autoplaying and preloading and completely disable WebRTC and OpenH264.

Even ungoogled Chromium is worthless, in that respect.

It allows you to be tracked literally- both digitally when you browse the internet or use an app, and geographically- every time it pings a tower, it leaves a footprint. The only way to completely eliminate being tracked, digitally or geographically by your cell phone is to not have one at all.
