I've read that. Although it provides ways to restrict or limit auto updates, it doesn't "disable" them.
The marked answer in the first link is my reply to you as well.
I can stop it within reason, have looked at an individual game properties? Updates options?

Valve initially had a type of do not update option the first year or so. They stopped that about 2006.
The next one was worded differently than the one we have now but did the exact same thing it does now, update when launched.
