I enjoyed Sleeping Dogs and the Yakuza series but they are both more RPG than straight fighting.
For that matter the combat system in Batman Arkham Asylum (and sequels - also a variant in Mad Max) is pretty good.
TBH I struggled with the controls, the very clunky story, and the gross sexism of the newer Mortal Kombat games - the greatest superpower on display is the girls' breasts somehow staying inside their flimsy tops. Minority report.
Injustice - Gods Amongst Us gets good reviews.

Depends on the difficulty level you want and whether the theme appeals to you. This is always a difficult thing to discuss because what "clicks" for you might not for someone else.
SFV is a classic. If the gore doesn't put you off then MK11 is a win. Skull Girls is really good as well.
Edit: Tekken is amazing as well, but personally I find it incredibly difficult.
Best to ask the communities. You kinda need that in-depth input on this one.

I tried Streetfighter V and had fun
BlazBlue might be a great game, but terrible for newcomers. It's quite complex and gimmicky and has possibly the worst known netcode. I'd personally recommend Under Night in-Birth Exe:Late[cl-r]. It's simpler than Arc System Works' fighters and has the best tutorial you can find. The netcode is... okay. Guilty Gear Xrd would be my second pick, but it can be quite an up-hill struggle.
